At the moment I have the tank off and I'm using a small container and rubber tube to run fuel into my carbs whilst I test the bike and get a few things sorted.

Without the vacuum operated fuel tap, is it possible for me to overfill the float bowls and force fuel through the engine?

Or, will the floats float and force the float valve closed, stopping fuel running through to the cylinders?

Also, the stock fuel pipe length makes it a bloody pain to connect/disconnect the tank frequently. Has anyone put in a longer pipe to make this activity easier?

Your float valves should prevent fuel from going into the cylinders, though these can fail (i would disconnect the fuel line). Have a look at some dry break connectors if you want to easily disconnect the tank. Longer pipe will work but be aware that it may kink..
