First time I've been to the petrol station since I sorted my carbs and right after I filled up I noticed the idle had rose 400 revs on its own from when the tank had been about 1/3 full.

Is this just due to the gravity feed or is it a dirty fuel filter?

i would gues they are settling down adjust the tickover and see how it goes fresh fuel might also have a bearing on it.
