Forget about the tank bag option Dave, they're shit. They get in your way, the magnets and bag can move and if there's anything under them it'll scratch the shit outta the tank and you wont know about it until it's too late.
As for luggage, buy yourself the Kriega US range of luggage. I've 1 US20 and 2 US10's (the numbers represent the amount of litres of space) and I can assure you, 40 litres is more than enough for any trip.

I use an Oxford first timer tankbag on an NC30 with no worries. When fully expanded it can get it in the way slightly but no major dramas.

I did borrow a tank bag for my NC35 once, and to be honest it was a pain in the arse. The biggest issue is that unless you remove your air tubes, it'll sit back a lot further than intended. This makes it uncomfortable when full, and I found it slightly hampered my riding position, and generally made things awkward. I didn't think of taking the tubes off, which would probably have completely polarised my view of the things. In my case, I'm not worried about scratches on the tank as it's tatty anyway. Don't some come with proper straps to go under the tank if you can be arsed to take it off to fit them?
