It sounds very much like the restriction is kicking in (losing power to 2 cylinders after 5000 rpm). Mine did this once and it's not as obvious as you think, especially if you've never rridden an nc30 before!
Derestrict it (resistor method) and see how it goes.

Cheers Stickshift... Wasn't sure if the rev range stopped at 5000rpm with the restriction but that was one of my thouights.
