the speedo is in one window. the rev counter another and the temp another. the speedo internals are removable if you dismantle the clocks. a pic would help!
the slits are probably for the foam surround that they had originally.

No the speedo doesn't unbolt. There's a cosmetic piece of grey foam around the rev counter and temp gauge held with 3 wide headed plastic bolts

3TJ02 is the model code for the SP with CV carbs, I think these carbs are the same as the RR bikes. To remove the jets you need to take the float bowls off.

It's an air jet - all CV carbs have them. You can take them out becuse they're replaceable and of course they're made of brass because they're made to a tollerance. I don't think these are adjustable as such, you can screw them in and out of course but the jet itself measures a fixed amount.
They might have been confusing this with the "Pilot Air Screw" which sits forward of the float chamber (or engine side), this can be adjusted and will affect slow running, they should be at 2.5 turns out on an SP standard factory setting.

Have a look at theis page and go just over 3/4 down, you'll see 2 videos and you can see both the air jets in the bellmouth.
