Clean the contacts up and put it back together. Start her up and see what happens.
If all is well then take it for a ride but don't stray too far from home just incase.

Carbs aren't that scary if you take your time, and theres plenty of people on here that know what there on about.
If it were a fuelling issue then this is what I would do...even though with an intermittent fault i can't guarantee this would work
But
Remove the tank and stick a funnel in the fuel line in order to give a direct fuel feed and see how the engine runs. If it's fine then the carbs are not a problem, which is a good thing. Take the fuel tap off, check the filter/and that the diaphragm inside the tap is in good condition.

If it doesn't run with a direct fuel line then take the carbs off, and clean em out.

How old are the spark plugs by the way? Can't remember if that question has been covered lol

Yeah, already done the contacts.

I'm 90% sure all WILL be okay. Thing is it was fine before I started looking for the problem, so it's pretty hard to tell if what I've done has made any difference!!

Also your plan makes some sense, but... The engine ran fine off the tank the day after it cut out - firing on four and sounding very smooth and nice - so I'm not sure what a direct fuel supply will achieve in terms of diagnostics!

The plugs... I have no idea, truth be told. I've had the bike a few months now - since like February? I was told they were recently replaced when I bought it, but no receipts were given..

Pull the choke on when the 24's warm and watch how quickley it dies.

Mine was intermittently dying at traffic lights some days unless i gave it loads of gas to keep it alive, choke mech was stiff and sometimes sticking 'on'

I scanned in the copy of the NC24 owners handbook, theres a fulll 24 wiring diagram in that if you want to do some proper electrical diagnosis.
